- 1 whole egg
- 1 cup olive oil or slightly more
- 1 tablespoon white vinegar or fresh lemon juice
- ¼ teaspoon dry mustard powder
- salt and pepper to taste
- a little honey to taste
Blend in your food processor for a few seconds: egg, lemon juice (or vinegar) mustard, salt, pepper and honey. While the machine is running, add the oil in a fine stream. Do not add oil quickly; it should take at least 60 seconds. As mayonnaise thickens, the sound of the machine will deepen.
Here’s what one of my Facebook friends who made the recipe said: “The mustard powder actually made all the difference. I’ve made some without and I can honestly say I’ll be using it again. I also did not have a good processor, but you can use an emulsion blender. Throw all the ingredients into a dish, and put the blender all the way down to the bottom and blend for probably about 30-45 seconds and it will start to thicken, and then you can move it up and around until it’s completely blended.”
